Cretan Salad
1 large loaf leftover crusty bread (or barley rusks)
3 Roma tomatoes
1 jar capers, rinsed & drained
1/2 C Feta cheese
Black pepper to taste
4 TBS olive oil
1/4 C fresh oregano leaves
1/4 C lemon juice
Rinse and dice tomatoes; set aside. Warm or toast bread in a 350-degree F oven for about five to ten minutes. Place bread on a platter; top with diced tomatoes. Sprinkle with feta cheese and black pepper. In a bowl, mix together the capers, lemon juice and olive oil; spoon mixture over tomatoes. Garnish with oregano leaves; serve.
