2 tsp. finely ground coffee
1/4 C milk
2 egg whites
1/2 tsp. salt
1/4 C sugar
1/8 tsp. almond extract
1/4 C almonds, finely chopped
4 oz. whipped topping, thawed
In a large bowl, dissolve finely ground coffee into the milk. In another bowl, beat egg whites with salt until foamy. Gradually beat in sugar until mixture forms stiff, shiny peaks. Blend in the coffee/milk mixture, almond extract and finely chopped almonds. Fold in whipped topping; spoon mixture into individual cups or parfait glasses. Garnish with additional chopped almonds; freeze until firm. Serve.
