Carne Pizzaiola
Meat Pizza Stew
1 C egg noodles, cooked according to package directions (or prepare homemade)
1/3 LB top round steak, cut into two pieces
Olive oil
2 cloves of garlic, peeled & chopped
Salt to taste
1/2 C tomatoes, chopped (fresh or canned)
1/4 C white wine (optional; sub with water)
1/4 C fresh parsley, chopped
Parmesan cheese, grated
Add enough olive oil to cover the bottom of a large skillet; heat over medium-heat. Add garlic; cook and stir until browned. Remove the garlic with a slotted spoon and set aside. Add round steak to skillet; season with salt to taste. Cook both sides of steak; about one or two minutes per side. Remove steak from skillet and set aside. Add chopped tomatoes to skillet; sauté and stir occasionally until sauce begins to form, about five to seven minutes. Return garlic and steak to skillet; add white wine if desired (or use water). Cook for three to five minutes, stirring occasionally. Remove skillet from heat; add chopped parsley. Arrange cooked egg noodles on a serving platter; place steak mixture on top. Spoon remaining sauce in skillet over steak; sprinkle with grated Parmesan cheese. Serve.
