3/4 C margarine
3/4 C sugar
1 egg
1 tsp. vanilla
1-1/2 C flour
1/2 C cornmeal
1 tsp. baking powder
1/4 tsp. salt
1/2 C raisins (optional)
In a bowl, cream together the margarine and sugar. Add the egg and vanilla and mix until smooth. The add flour, cornmeal, baking powder and salt; mix until smooth. Add raisins if desired. Drop dough by tablespoon onto a greased cookie sheet. Bake at 350-degrees F for about fifteen minutes, or until lightly browned.
Recipe makes about eighteen cookies.
