Creamy Chicken Popovers
•1 can (10.75 oz.) condensed cream of mushroom soup
1 C leftover cooked chicken or turkey, cubed
1/2 C leftover cooked ham, cubed
3 cloves garlic, peeled & minced
1-1/2 C frozen peas & carrots
2 TBS butter
1 large onion, diced
3 TBS heavy cream
1 TBS cornstarch
Salt & black pepper to taste
1 pkg. (about 9 oz.) popovers, cooked according to package directions
In a large skillet, combine all ingredients (except popovers). Cook over medium heat until mixture has thickened; season with salt and black pepper to taste. Place cooked popovers in a casserole dish; spoon thickened and hot meat mixture over the top. Serve.
