3 C leftover cooked chicken, chopped fine
1-1/2 C seasoned dry breadcrumbs
2 eggs, lightly beaten
2 C chopped onion, sautéed
1 TBS fresh parsley, chopped (sub with dried flakes)
Salt & black pepper to taste
1 to 2 TBS vegetable oil
Shredded purple cabbage and carrots (for garnish, optional)
In a bowl, combine chicken, breadcrumbs, eggs and onion; mix well. Note: If mixture appears too dry to form patties, mix in another beaten egg. Add parsley, salt and black pepper; mix well. Form mixture into small patties. Heat vegetable oil in a large skillet over medium heat; cook chicken patties until golden brown in color, turning once. Garnish with shredded purple cabbage and carrots if desired. Serve.
