2 TBS cumin seeds
1-1/2 tsp. fennel seeds
1 tsp. mint
1 TBS Amchur (mango powder)*
1 TBS black salt
1 tsp. cayenne pepper
1/4 tsp. ground ginger
Toast and grind cumin and fennel seeds and combine with remaining ingredients; recipe makes about 1/3 cup. Mixture should be refrigerated; store in a jar with a secure lid.
Uses: Sprinkle on fresh fruit or grilled meats, or as an optional topping for Potato, Cauliflower & Onion Pakoras.
Note: Chaat Masala is commonly used in Indian and Pakistani cuisines.
*About Amchur: According to Gourmet Sleuth, "Amchur (amchoor) powder is also referred to as 'mango' powder. It is made from green dried, ground mangoes. The spice imparts a tart and slightly sour flavor to many Indian dishes including fish, meats, vegetables and curries. Substitute for Amchur: Tamarind paste or lime juice.
