1-1/2 C corn or oat breakfast cereal (re: Captain Crunch)
1-1/2 C bread flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 C butter, softened
1/3 C butter-flavored shortening
1/2 C brown sugar, packed
1/2 C white sugar
2 eggs
1 TBS vanilla
Preheat oven to 350-degrees F. Grease three baking sheets. Process cereal in a food processor or blender until it becomes a fine crumb texture. In a bowl, whisk together cereal crumbs, bread flour, baking powder and baking soda. Set aside. In another bowl, beat together the butter, shortening, brown sugar and white sugar with an electric mixer until smooth. Add eggs and vanilla, mixing well. Combine cereal and butter mixtures until just incorporated. Drop by heaping spoonfuls onto prepared baking sheets. Bake until edges are golden, about twelve minutes. Allow cookies to cool on baking sheets for about one minute before transferring to a wire rack to cool completely.
