Cauliflower Salad
1 large head cauliflower, trimmed & chopped
1 red onion, chopped
1 green bell pepper, seeded & chopped
4 scallions, minced
3 TBS fresh chives
2 C basmati rice, cooked
1/2 C bottled vinaigrette dressing
Place cauliflower in a steamer basket over boiling water, or use an electric steamer. Cover and steam about three to seven minutes, or until almost tender. Drain and chill. Combine red onion, green bell pepper, scallions, fresh chives and rice into a bowl. Add the chilled cauliflower; drizzle with dressing. Serve chilled.
