Spiced Coffee
4 C water
1/3 C dark brown sugar, packed
1 cinnamon stick (3" length)
8 whole cloves
1 orange peel (3" length), white rind removed
1/2 C dark-roasted coffee, coarsely ground
Milk (optional)
Combine water, brown sugar, cinnamon stick, cloves and orange peel in a saucepan. Heat over medium to high heat; bring to a boil, stirring occasionally. Lower heat; cover saucepan and allow mixture to simmer for about five minutes. Remove saucepan from heat; stir in coffee and allow to stand for about eight minutes, covered. Use a sieve or coffee filter to strain the coffee into four individual cups. Add milk, if desired. Serve.
Note: "Olla" is a clay mug or pot in which the coffee is traditionally served or prepared.
