1 tsp. butter
1 small onion, chopped
3 carrots, chopped
3 potatoes, peeled & chopped
1 C leftover kernel corn, string beans or peas
1 can (14.5 oz.) diced tomatoes in juice
1 LB leftover cooked ground beef
1 C water (more or less as needed)
1 beef bouillon cube
Sauté chopped onion in a large skillet with butter. Add chopped carrots, potatoes, diced tomatoes, leftover ground beef, water and bouillon cube. Cook on low for about forty minutes to one hour, stirring occasionally. Serve.
Variations: Substitute ground beef with any leftover meat, such as ham, pork or poultry.
