4 eggs, yolks discarded
1-1/4 C sugar
1/2 tsp. baking powder
1/2 tsp. almond extract
1-1/2 C sliced almonds
1-3/4 C all-purpose flour
1/4 C large-granulated sugar
Separate the eggs and discard the yolks (unless you want to freeze them and use them for other recipes). Place egg whites in a large mixing bowl; add the granulated sugar, baking powder and almond extract. Blend the ingredients with an electric mixer. Then add almonds, flour and large-granulated sugar. Continue to mix on low speed until ingredients are well mixed. Remove mixture from the bowl; cover tightly with plastic wrap. Chill in the refrigerator for about one hour.
Take three tablespoons of the dough and roll into a tube shape (about 3" long). Place on a greased and floured cookie sheet. Repeat with remaining dough. Bake at 325-degrees F for fifteen to twenty minutes, or until the cookies are lightly golden. Remove from oven and allow to cool slightly.
To mold the cookies into "bone" shapes, take a cookie between your hands and roll it slowly to form a hot-dog shaped tube. Gently squeeze cookie together in the palm of your hands so that the cookie sticks out slightly on each side (near your thumb on one side, and near your pinky finger on the other). Form the ends of the "bones" by pinching the cookie ends in a heart shape.
