1/2 C butter, softened
3/4 C sugar
3 eggs
2 C flour, sifted
1/2 C currants
Zest of 1 lemon
3 TBS milk
1 tsp. baking powder
1 egg white
Powdered sugar for dusting
Parchment paper
Preheat oven to 350-degrees F. In a bowl, cream together softened butter and sugar until fluffy. In another bowl, beat eggs and then add to butter/sugar mixture. Add flour a little bit at a time. Mix thoroughly after each addition; stir in currants, lemon zest, milk and baking powder. Pour batter into a greased cake pan lined with parchment paper. Bake for about one hour. Remove from oven before brushing the top with egg white and sprinkling with powdered sugar. Allow to cool before slicing.
