1-3/4 C milk 1 onion, peeled & cut in half
2 cloves
1 bay leaf
5 black peppercorns
1/2 tsp. salt
Grated nutmeg to taste
4 TBS breadcrumbs
2 TBS butter
Pour milk into a heavy bottomed pan. Add bay leaf, peppercorns, salt and nutmeg. Push cloves into the halved onions; add to milk mixture. Bring the milk to the boil. Remove from heat; cover and allow to stand for about thirty minutes. Remove onion and spices with a slotted spoon; strain milk through a fine sieve. Return milk to the pan; add breadcrumbs. Bring to the boil; reduce heat and simmer for about ten minutes, or until mixture is thick and creamy. Stir in butter.
Note: Bread Sauce is traditionally served with roasted chicken, duck or turkey. It is especially popular in England as an accompaniment to roast turkey dinner at Christmastime.
