Blueberry Sauce
1 C water
1 pint fresh blueberries
3/4 C sugar (or use less to taste)
1 TBS cornstarch
1/8 tsp. salt
1 tsp. lemon juice
In a saucepan over medium heat, bring water to a boil. Add blueberries; bring to a boil again. In a bowl, combine sugar, cornstarch and salt; stir into blueberries. Cook, stirring constantly, until mixture thickens. Add lemon juice; stir. Allow to cool slightly before serving.
Suggestions: Use Blueberry Sauce as a topping for ice cream or as a drizzle on cooked fruit pies.
