Food Fare: Native American RecipesBison Meatballs with Wild Rice

Place all ingredients (except oil and barbecue sauce) in a large bowl. Combine without over mixing until evenly blended. Form mixture into small meatballs. In a large skillet, heat olive oil. Add meatballs, cooking in batches. When the meatballs are seared, remove from skillet and set aside. Add barbecue sauce and water or stock to the skillet. Cover and bring to a low simmer; add the seared meatballs. Cook on simmer for about ten minutes. Serve.
