Hamburger Patties
1 LB lean ground beef
1 purple onion, chopped
1 tsp. thyme (dried or fresh-chopped)
1 tsp. mint (dried or fresh-chopped)
1 tsp. parsley (dried or fresh-chopped)
2 eggs
2 TBS lemon juice
Salt & black pepper to taste
5 cloves garlic, minced
1 C breadcrumbs
1 block (6 oz.) Feta cheese (sub with well-drained small curd cottage cheese)
Hamburger buns
1 tomato, sliced
Combine ingredients (except feta cheese, buns and sliced tomato) in a bowl; mix well with hands. Shape mixture into round or oval patties. Cut feta cheese into 1/2-inch slices. Push one feta slice into the middle of each patty; form meat around the cheese and seal by pressing or pinching with fingers. Broil patties in the oven until fully cooked. Top patties with tomato slices and serve on hamburger buns. Recipe variations: Cooked rice can be used in place of bread crumbs, or tomato gravy instead of lemon juice.
For an alternate presentation of Bifteki, try the following:
Bifteki in Sauce
6 TBS tomato paste
1 C beef broth
1/2 C red wine
1/2 C sour cream
Once the Bifteki patties are cooked, take the meat drippings, tomato paste, beef broth and red wine, and mix in a large skillet. Heat over low heat until liquid thickens. Remove from heat; stir in sour cream. Add cooked patties and simmer for about ten minutes. Serve.
