Bread & Cheese Patties
1 egg, beaten
Black pepper to taste
1/2 C feta cheese, crumbled
1 TBS parsley, minced
4 green onions, minced (use greens only)
3 slices leftover bread, crumbled
Vegetable Oil
Beat egg in a bowl; whisk in black pepper. Crumble feta cheese and add to egg mixture; stir in minced parsley and green onions. Using a spoon, mix in leftover crumbled bread. Heat vegetable oil in a skillet; place a heaping tablespoon of bread mixture into hot oil. Cook five to six patties at a time, depending on the size of the skillet and/or patties. Cook each side for about one to two minutes, or until golden brown in color. Drain patties on paper towels to remove excess oil. Serve warm.
