Mauritanian meat & vegetable stew
Peanut oil (for frying)
1 LB beef or lamb, cubed
2 onions, sliced
2 LBS potatoes, peeled & quartered
4 carrots, peeled & sliced
1/2 LB turnips, peeled & sliced
Water
Salt & black pepper to taste
Heat a little peanut oil in a cooking pot. Add the meat and onion slices; cook and stir for about five minutes over high heat. Add the potatoes, carrots and turnips; pour in four to five cups of water and season to taste with salt and black pepper. Bring mixture to a boil; reduce heat to simmer and cover. Cook for about one hour or until meat is tender; ladle stew into bowls and serve.
