2 LBS tomatoes (about 4 ripe tomatoes)
Extra-virgin olive oil
Fresh basil, chopped
Salt & black pepper to taste
Preheat oven to 250-degrees F. Slice tomatoes in half; remove seeds. Grease a baking dish with olive oil; arrange tomatoes in one layer, cut-side up. Drizzle olive oil over the top of tomatoes, and sprinkle with breadcrumbs, basil, salt, and pepper. Bake for about ninety minutes.
Suggestion: Serve as an appetizer or side dish.
