2 ripe avocados
4 eggs
Black pepper to taste
1 TBS fresh chives, chopped
Preheat oven to 425-degrees F. Slice avocados in half; remove pits. Scoop out approximately two tablespoons of flesh from center of the avocado. Place avocado halves in a baking dish; crack an egg into each avocado half. Bake for about fifteen to twenty minutes, or until egg whites have set. Season tops with black pepper and chopped fresh chives. Serve.
