1 large ripe avocado
1 tsp. lemon juice (or more to taste)
2 TBS green chili peppers, diced
1 egg, lightly beaten
2 TBS green onion, chopped
1 clove garlic, minced
1/2 tsp. salt
1 LB lean ground beef or ground turkey/chicken
1/2 C Monterey Jack cheese, grated
4 hamburger buns, split & toasted
4 butter lettuce leaves
4 thin slices of tomato
Halve the avocado lengthwise and remove pit; then peel. Slice avocado and coat pieces with lemon juice; set aside. In a bowl, mash the remaining avocado half. Stir in the chili peppers, egg, onion, remaining lemon juice, garlic and salt. Add the ground beef (or ground turkey or chicken to preference); combine thoroughly. The mixture will be moist. With hands, shape meat into four patties, about 3/4-inch thick each. In a large skillet, cook patties over medium-low heat until meat is thoroughly cooked and browned. Turn over to brown other side. Drain patties on paper towels to remove excess fat. Sprinkle each patty with two tablespoons of Monterey Jack cheese; cover with wax paper and let stand for about five minutes. Arrange patties on bottoms of buns and top each patty with lettuce leaves, tomato slice and a few extra avocado slices. Cover with remaining buns and serve.
