In a skillet, sauté onions, almonds and cilantro in olive oil until almonds are browned. Add cooked angel hair pasta, diced chicken or turkey, lime juice, salt and black pepper. Toss to coat; cook until thoroughly heated. Carefully remove center cone of artichoke leaves; scrape out fuzz with a grapefruit spoon. Fill artichokes with pasta mixture; spoon salsa between artichoke leaves and on top of pasta. Serve.
