Amber Day Tart

In a cooking pot, parboil or sauté onions and parsley; drain well. Mix with all other ingredients in a large bowl. Place mixture into a nine-inch pie shell. Bake at 350-degrees F for about thirty-five or forty minutes, or until pastry is golden brown and filling is set.

Trivia: Tart in Ymbre Day (Amber Day Tart) was a traditional Medieval recipe for a meatless tart of cheese and onions, typically prepared for a meatless day of religious observance.
