Aash Rechte
Iranian winter noodle soup
1 LB dried white beans (soaked overnight)
8 C water
3 medium onions, finely chopped
2 medium turnips, finely chopped
1/2 LB fresh spinach, chopped
1 bunch fresh parsley, finely chopped
1 bunch cilantro, finely chopped
2 tsp. salt
1/2 tsp. black pepper
1/4 tsp. turmeric
3 TBS corn oil
1 LB egg noodles
Soak white beans in water overnight; drain. Place beans and eight cups water in a large cooking pot; cover and cook over low heat for about one hour. Add remaining ingredients (except noodles); bring to a boil. Cook over low heat for about thirty minutes. Add egg noodles and cook uncovered for an additional fifteen minutes. Serve.
