Simple Supper

Tonight I prepared six chicken thighs by seasoning them with garlic and ginger, and then soaking the lot in teriyaki sauce and a dash of soy, sprinkling plain breadcrumbs on top. I lightly coated the bottom of a baking dish with olive oil, and cooked the chicken at 350-degrees F for about an hour.

 

Afterward, I removed the foil cover and baked the chicken for an additional thirty minutes. As a side, I threw together ramen noodles (fully cooked but drained of liquid), and tossed them with the accompanying seasoning packets and a bag of frozen mixed vegetables pre-cooked beforehand. I stirred the noodles and vegetables together, also adding a pat of butter.

 

Surprisingly, the dinner turned out well. The chicken fell from the bone, and the side of ramen and veggies had a nice taste and texture.

 

Wilbert raved about the meal. Even Foofer gave his seal of approval, conning us into giving him an entire thigh to himself and then some.

 

*POSTSCRIPT (Wed, 12/10/03): Wilbert surprised me yesterday and made a tasty lunch of chicken thighs mixed with plain white rice and chopped broccoli. The only spices included were salt, black pepper and a packet of chicken-flavored ramen seasoning. It was wonderful! Wilbert was quite pleased with himself. My recent hints that he never cooks a meal must have struck home – and he more than compensated.
