Potluck Stir-Fry Surprise

Last night Wilbert had a potluck at the hospital where he works. Instead of buying a pre-made fruit or potato salad, he threw together his own concoction.

 

He started with thick pork ribs, slicing them in half lengthwise and then chopping into bite-sized pieces. He cooked the meat in a skillet with minced onion and chopped bacon. For seasoning, he added salt, black pepper, garlic and dried coriander. He also poured in a can of chopped tomatoes with their juice, and a medium-sized can of cut green beans, drained. He let the entire mixture simmer for about twenty minutes before tasting the dish.

 

He heated flour tortillas on the stove element and then spooned the meat mixture inside, rolling up the tortillas before eating. Wilbert's potluck combination was quite delicious, although it went against my grain as he did not drain the fat after cooking the pork and bacon. I'm not sure what to call the dish, other than some sort of "potluck stir-fry" in a tortilla.

 

Needles to say, he didn't bring home any leftovers from his party at work.
