Spicy Perch Sandwich

One of my favorite foods are sandwiches. I have taken a recipe from one of my favorite local restaurants in London, Ontario (Joe Kool's) and made my own twists. I would like to share it with everyone. It is one of the best-tasting sandwiches: yellow perch sandwich with spicy mayonnaise for an extra kick!

 

Spicy Yellow Lake Perch Sandwich

2 Yellow Lake Perch Fillets

Milk

1 C Panko breadcrumbs

2 eggs, beaten

1 C flour

Extra virgin olive oil

Salt & black pepper to taste

1 lettuce leaf

1 slice of tomato

1 Kaiser roll

 

Spicy Mayonnaise

3/4 C of mayonnaise

1 TBS fresh lemon juice

1 tsp. Cajun seasoning spice blend

1/4 tsp. hot pepper sauce

 

To prepare Spicy Mayonnaise, mix ingredients into a bowl. Cover and place in the refrigerator; allow to chill. Soak the perch fillets in milk to eliminate traces of "fishy" taste. Assemble three large bowls, one each for flour, panko breadcrumbs and egg wash. Remove fish fillets from milk and pat dry. Season fillets with salt and pepper to taste. Dredge each fillet in flour, then into egg wash (until completely soaked) and lastly dip into bowl of panko breadcrumbs. Heat a large pan on low-to-medium heat for about two and a half minutes; coat pan with extra virgin olive oil. Place fillets in the pan and cover; cook on low to medium heat for four to five minutes. Use a fork to test for doneness. Spread chilled Spicy Mayonnaise on a Kaiser roll, add fish fillet and top with tomato and lettuce. Serve.
