Salad Frenzy

I've been on a salad binge for the last week.

 

Every day for lunch I've made a meal-sized salad by combining different types of lettuce (iceberg, romaine and bibb), along with diced carrots, fresh baby spinach, green and red bell peppers, scallions, cubed cheddar and mozzarella cheeses, deli chicken meat, large handfuls of cashews, salted Spanish peanuts, Almond Accents and just enough Ranch Dressing to hold it all together.

 

I absolutely adore salads, and anything at all that contains nuts, so I'm not complaining. Wilbert thinks I'm crazy, but I can't think of a better mid-day meal.

 

Perhaps the only foods which might lure me away from salads is a Mexican feast or a nicely turned-out Japanese dish.

 

By the way, does anyone know why grocery stores place the plastic netting over heads of iceberg lettuce? I have a suspicion it's to hold all the leaves together, but I'm not sure. Any ideas?
