Saturday's Lunch

I was yearning for real food today, having grown tired of chicken noodle soup during my bout with a cold last week. I wanted something tangible to sink my teeth into, rather than force-feeding myself limp noodles and salty broth.

 

I found a package of thick pork ribs in the freezer and proceeded to boil them gently in a large pot for about two hours. Afterward, I took them out of the water and placed them on a plate to cool, and then diced a small onion. After the meat became cool enough to handle, I pulled strips off the bones with a fork so that they resembled shredded meat. I heated olive oil in my cast iron skillet, adding minced garlic and the diced onion. Once the onion was soft, I added the shredded pork and seasoned the meat with salt and black pepper. I let the mixture simmer for awhile while I grilled four tortillas on the stove element. I like the barest hint of grill marks on the tortillas before I deem them ready.

 

We spooned the pork mixture down the center of the tortillas before rolling them up, adding a bit of cheddar cheese as well.

 

The grub was delightful – not too spicy but definitely flavorsome. On the side I had a bowl of lightly buttered kernel corn, a tall glass of lemon iced tea for me and cherry-flavored Kool-Aid for my husband.

 

Quite satisfying.
