1 large zucchini, peeled
3⁄4 C cornstarch
1⁄4 C flour
1 tsp. baking powder
1-1/2 tsp. salt
1⁄2 tsp. black pepper
1⁄2 tsp. garlic powder
1⁄2 C water
1 egg
Vegetable oil
In a bowl, mix together all ingredients except zucchini and vegetable oil. Set aside. Peel zucchini; cut into slices (about 1/2" thick). Add vegetable oil to a skillet over medium heat, about 1/3" deep. Dip sliced zucchini into prepared batter; fry in hot vegetable oil until golden brown on both sides, turning once. Drain on paper towels. Sprinkle with extra salt before serving, if desired.
