1 C butter, softened
1 C granulated sugar
3 large eggs
2 C all-purpose Flour
1/4 C Irish whiskey
1/4 C candied citron, chopped
1/4 C golden raisins, blanched & chopped
1/4 C almonds, chopped
Preheat oven to 375-degrees F. Grease two baking sheets; set aside. In a small bowl, cream together butter and sugar. Beat in eggs until well blended. Add flour and Irish whiskey; beat dough until smooth. Add candied citron, golden raisins and chopped almonds; mix well. Drop cookie dough from a tablespoon onto prepared baking sheets. Bake for eight to ten minutes. Remove cookies from the baking sheets with a spatula while still warm. Place on a wire rack to partially cool. Store cookies in an airtight container with a slice of white bread to maintain soft, fruity texture.
