Tabouleh
Jordanian bulgur salad
1 C bulgur
1-2/3 C boiling water
1/3 C olive oil
1/3 C lemon juice
1 C green onions, chopped
1 C fresh parsley, chopped
1/4 C fresh mint, chopped
3 tomatoes, chopped
1 cucumber, peeled, seeded & chopped
Salt & black pepper to taste
Combine bulgur and boiling water in a large bowl; cover with a kitchen towel and set aside to soak for about one hour. Drain. Add olive oil, lemon juice, green onions, parsley, mint, tomatoes, cucumber and salt and black pepper to taste; toss to combine. Cover and refrigerate for at least one hour before serving.
