Cypriot rice pilaf with spinach
2-1/4 LBS fresh spinach
1/2 C rice, washed & drained
2 C water
1/2 C olive oil
1/4 C onions, finely chopped
Salt & black pepper to taste
Wash spinach thoroughly; drain and chop into small pieces. Add olive oil to a deep skillet; add onions and cook until softened. Stir in spinach; continue to cook until just wilted. Add water and season with salt and black pepper to taste. Cover skillet and cook for about thirty-five minutes; stir in the rice. Cover and simmer for about twenty minutes or until rice is tender and all liquid has been absorbed. Serve.
