Soljanka
Spicy-Sour Soup
Vegetable oil or butter
1 LB stewing beef, cut into strips
1/4 LB chorizo sausage
1/2 LB ham, sliced thin
1 onion, cut into rings
2 carrots, peeled & diced
1 dill pickle, cut into strips
1 TBS tomato paste
1 can (14-1/2 oz.) stewed tomatoes
1-1/2 C water
6 mushrooms, sliced
12 pitted black olives, chopped
1 TBS capers
Salt & black pepper to taste
1 TBS sour cream (for serving)
1 lemon slice (for garnish)
Heat a skillet with vegetable oil or butter. Cook onion rings until transparent but not browned. Add diced carrots, dill pickle strips and tomato paste; stir and cook over medium heat for two to three minutes. Add beef strips, chorizo sausage and ham. Stir to mix well. Add stewed tomatoes and water; season with salt and black pepper to taste. Cover and simmer over low heat for one to two hours, stirring occasionally. During the last thirty minutes of cooking time, add mushrooms, olives and capers. Stir in flour to thicken. Serve with a dollop of sour cream and lemon slice for garnish. Recipe makes six to eight servings.
