6 to 9 small yellow potatoes
Salt & black pepper to taste
Parsley
Olive oil
Butter
Clean potatoes under cold running water; leave skins on. Using a sharp knife, cut potatoes almost all the way through in several layers. Place on a microwave-safe plate. Drizzle top of potatoes with olive oil; season with salt, black pepper and parsley. Cook uncovered in a microwave for about four minutes. Test for tenderness with the point of a knife or a fork. Heat two or three minutes longer if necessary. Dot tops of potatoes with butter. Serve.
Note: Potatoes can also be baked. Using the same preparation method as above, place potatoes in a baking dish and cook at 425-degrees F for about forty minutes.
