1 egg
1 small green bell pepper, sliced into rings
Butter
Salt & black pepper to taste
Slice green bell pepper into rings. Melt butter in a frying pan over medium heat. Place bell pepper ring into pan; crack an egg inside the ring. Cook until yolk reaches desired doneness. Remove from frying pan; trim edges with a knife if necessary. Suggestion: Serve with hash browns, bacon or sausage for a complete breakfast.
Hint from Centra: The trick is to find the perfectly-shaped bell pepper that will give the shamrock shape.
Shenanchie's Note: I don't like dippy or runny eggs, so I hard-poached my egg inside the bell pepper ring in about 1/2" of water instead of frying it in butter.
