Sambuusa
Djiboutian savory pastries
2 TBS olive oil
1 small onion, finely chopped
1 leek, chopped
1 clove garlic, minced
2 LBS ground beef
2 tsp. ground cumin
2 tsp. ground cardamom
Salt & black pepper to taste
1 TBS all-purpose flour
1 TBS water (or more as needed)
1 pkg. (14 oz.) spring roll wrappers
1 QT vegetable oil (for frying)
Heat olive oil in a large skillet over medium heat. Add onions, leek and garlic; cook and stir until onions are transparent. Add ground beef; cook until meat is about halfway done. Season mixture with cumin, cardamom, salt and black pepper; continue to cook until beef is fully browned. Allow to cool before assembling Sambuusa. In a small bowl, mix together flour and water to make a thin paste. Fold spring roll wrappers into cone shapes. Fill cones with the meat mixture; close tops and seal with flour-water paste. Repeat process with remaining spring roll wrappers and meat filling. Heat vegetable oil to 365-degrees F in a deep-fryer or wok. Fry Sambuusa a few at a time until golden brown. Remove carefully; drain on paper towels. Recipe makes about two dozen.
Suggestion: Serve with chutney, hot sauce or sweet-and-sour sauce for dipping.
Note: Sambuusa is commonly served during Ramadan.
