William Harrison's Pound Cake
1/2 C plus 2 TBS (1-1/4 sticks) butter, room temperature
3/4 C sugar
3 eggs, room temperature
1-1/2 C cake flour
1 tsp. cinnamon
1/4 tsp. powdered mace
1 TBS nutmeg
1/2 tsp. baking powder
2 TBS white wine
2 TBS brandy
2 TBS rose water
3 drops lemon oil
Preheat oven to 350-degrees F. In a large bowl, beat butter until light in texture. Gradually add sugar; beat with an electric mixer or hand mixer until mixture is light and fluffy and almost white in color. Beat in eggs, one at a time, until incorporated. In another large bowl, sift together flour, cinnamon, mace, nutmeg and baking powder. In a small bowl, combine white wine, brandy, rose water and lemon oil. Gradually add flour mixture and wine mixture into butter-sugar mixture until fully incorporated. Place batter in a greased and floured 8-by-4-inch loaf pan. Bake until a toothpick inserted in the center of the cake comes out clean, about one hour; rotate loaf pan halfway through baking for even coloring. Allow cake to cool on a rack for five to ten minutes. Remove cake from the pan to cool completely. Slice and serve.
History Note: William H. Harrison was the 9th President of the United States. He died from pneumonia complications on his 32nd day in office (1841).
