Irish Potato Salad
1 LB small new potatoes
1 TBS butter
1/2 C mayonnaise
Salt & black pepper to taste
1 TBS fresh chives, chopped (for garnish)
Water
Bring a large pot of water to a boil. Add potatoes; cook for twenty to twenty-five minutes or until potatoes fall off knife when pierced. Drain potatoes; cut into bite-sized pieces if needed. Place potato pieces into a large bowl; add butter and stir until melted. Add mayonnaise, salt and black pepper until potatoes are coated. Garnish with chives. Serve. Store unused portions in a sealable container in the refrigerator. Recipe makes enough for five to six servings.
