1/4 C butter
1 C flour
1/2 tsp. salt
1/2 tsp. baking powder
3 C freshly mashed potatoes (made with milk)
In a bowl, cut butter into the flour until it forms large bits. Add the salt and the baking powder, and mix well. Fold in the mashed potatoes. Knead mixture for several minutes. Roll out onto a lightly floured board. Cut the dough into two equal portions. Cook on a dry griddle or a buttered skillet until both sides are brown. Serve.
