3 flat pita bread rounds
3 TBS tomato sauce
2 tsp. Parmesan cheese
22 slices pepperoni (approximate)
16 mini-slices Canadian bacon (approximate)
1 small can (8 oz.) pineapple chunks, drained
1 pkg. (10 oz.) pre-cooked Italian Pizza Sausage crumbles
2 medium-sized fresh button mushrooms, cleaned & sliced thin
1 small green bell pepper, seeded, cleaned & cut into thin strips
1 slice purple onion, cut into thin strips
1 clove garlic, minced
2 C shredded "pizza" cheese (packaged mix of mozzarella, smoked provolone, Parmesan & Romano)
Nonstick cooking spray (Olive Oil flavor, if possible)
Drizzle of olive oil
In a small frying pan coated with a drizzle of olive oil, sauté green bell pepper strips, sliced mushrooms, purple onion strips and minced garlic over medium heat for about eight minutes, stirring often. Remove from heat and set aside.
Pre-heat oven to 400-degrees F.
Spray a large cookie sheet with olive oil-flavored nonstick cooking spray. Arrange pita bread rounds so that sides are not touching. Brush each round with a light coating of tomato sauce, and then sprinkle with dried Parmesan cheese. Liberally spread shredded "pizza" cheese on each round, making sure to leave a 1/2" space before the edges.
Thereafter, assemble each pizza as follows:
Pepperoni: Layer pepperoni slices evenly over cheese. If desired, add more shredded cheese on top after layering.
Hawaiian: Layer Canadian bacon slices and chunk pineapple evenly over cheese. If desired, add more shredded cheese on top after layering.
Sausage: Evenly layer sausage crumbles, green pepper strips, sliced mushrooms, purple onion strips and minced garlic over cheese. If desired, add more shredded cheese on top after layering.
Bake pizzas at 400-degrees F for about ten minutes, or until cheese melts thoroughly. Remove from oven and allow to cool for a few minutes. Cut each pizza into four triangles using a pizza cutter. Serve.
Note: Pita Pizza Trio can be served as an appetizer or entree.
