Pork-on-a-Stick

Cut pork into 1" cubes; place in a large bowl. Chop garlic. In a small bowl, mix garlic water, wine vinegar, salt and black pepper. Pour over meat cubes and stir. Cover bowl and place in the refrigerator. Allow meat mixture to marinate for at least three hours, or overnight.

 

Leaving two inches at the bottom of each skewer, arrange pork cubes. Squeeze cubes together. Continue to add meat until all is used. In a shallow bowl, combine breadcrumbs, curry powder, salt and black pepper. In a second shallow bowl, beat the eggs. Dip skewered meat cubes in breadcrumbs. Coat with egg, then dip in crumbs again.

 

With hands, pat skewered meat cubes dry. Place skewers on a large cookie sheet lined with parchment or wax paper; refrigerate overnight. Keep covered.

 

The next day, heat about one-inch of cooking oil in a large skillet. Fry skewers of meat cubes, a few at a time, until meat is lightly browned.

 

Combine onions and butter and spread in a large shallow baking dish. Place meat sticks on onions and bake in 275-degree F oven for about 45 minutes, or until meat is tender and no longer pink.
