1 quart shucked oysters, with their liquid
8 TBS butter or margarine, cut into pieces
8 C milk
2 tsp. salt
1 tsp. freshly ground white pepper
Paprika
2 TBS fresh parsley, finely chopped
Crackers (optional)
Heat the oysters in their liquid over high heat until edges begin to curl, two to three minutes. Add the butter or margarine, milk, salt and pepper and heat through. Pour the stew into a tureen; dust with paprika and sprinkle with parsley. Do not boil or overcook stew or oysters may toughen.
Suggestion: Serve with crackers.
