Orange Pancakes
1 1/2 C flour
1 1/2 C milk
1/8 tsp. salt
3 eggs
1 orange (for 1/2 tsp. grated orange rind)
Non-stick cooking spray or oil
Butter
Maple or fruit syrup (optional)
Powdered sugar (optional)
In a bowl, sift together the flour and salt. Break in eggs and mix thoroughly. Add the milk, stirring slowly until blended. Allow batter to stand for a few minutes, and then add grated orange peel. Stir. Note: Batter should be thin. Add more milk if necessary. Coat a large frying pan with non-stick cooking spray or oil. Ladle measures of batter into heated frying pan, cooking until lightly brown on one side. Flip pancakes and brown other side. Place pancakes on a plate and spread with a light coating of butter. Serve with preferred syrup.
Suggestion: Sprinkle pancakes with powdered sugar before serving (optional), or garnish with orange slices.
