3 oranges
1 C sugar
1/2 C buttermilk
3 large eggs
2/3 C olive oil
1-3/4 C flour
1-1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

Preheat oven to 350-degrees F. Butter a 9X5" loaf pan. Add sugar to bowl. Grate zest from two oranges; add to sugar. Fluff lightly with a fork until orange zest is evenly mixed in with sugar. Cut two oranges into segments; remove pith (white peel). Halve the remaining orange; squeeze juice into cup to measure 1/4 cup. Add buttermilk to juice until measurement equals about 2/3 cup. Pour mixture into bowl with sugar and orange zest; mix well. Whisk in the eggs and olive oil. Gradually sift in flour, baking powder, baking soda and salt. Gently fold in orange segments. Pour batter into prepared pan. Bake for fifty to fifty-five minutes, or until golden and knife inserted into center comes out clean. Cool on a rack for five minutes; gently remove cake from loaf pan. Allow to cool to room temperature right-side up. Slice and serve.
