Olive Oil Chocolate Chip Cookies
2-1/4 C all-purpose flour
1-1/2 tsp. salt
1 tsp. baking soda
1/4 C extra-virgin olive oil
1 tsp. vanilla extract
3/4 C granulated sugar
3/4 C brown sugar
2 eggs
1 TBS plus 1 tsp. milk
1 C chocolate chips
Preheat oven to 375-degrees F. In a bowl, combine the flour, baking soda and salt; set aside. In another bowl, combine sugars, vanilla and olive oil; beat in eggs one a time. Gradually beat into the flour mixture; add milk. Dough should not be overly sticky or dry, so adjust milk measurement accordingly. Roll the dough into balls using hands; place on a greased cookie sheet. Bake for ten to twelve minutes or until set and lightly golden; do not over-bake. Allow to cool on cookie sheet for about five minutes before removing to a platter with a spatula. Serve.
