Mulled Wine Muffins
1/2 C flour
1/4 C cornmeal
2 eggs
4 to 5 TBS butter, melted & cooled
2 tsp. baking powder
2 TBS mulled wine
Pinch of salt
1 pear, cored, peeled & cut into pieces
Preheat oven to 350-degrees F. Combine the butter, mulled wine and eggs in a bowl; whisk to combine. Add the flour, cornmeal and baking powder; mix well. Pour batter into greased muffin pan; fill each about 2/3 full. Scatter pear pieces over the top; push into the dough. Bake for about fifteen minutes or until cooked through and golden brown on top.
Note: Muffins au Vin Cuit are often served for breakfast during the Christmas season in Switzerland.
