Kleeja
Saudi Arabian cardamom cookie biscuits
1 C all-purpose flour
1/2 C granulated sugar
1/4 tsp. ground cardamom
1 pinch ground cinnamon
1/4 tsp. grated lemon peel
1/4 C ground almonds
6 TBS butter
1 egg
2 tsp. milk
1/3 C powdered sugar (for dusting)
In a bowl, sift together flour, 1/2 cup sugar, ground cardamom and cinnamon; stir in grated lemon peel and ground almonds. Cut in butter until dough resembles coarse crumbs. Add egg and milk; stir until mixture forms a ball. Cover and chill. Preheat oven to 400-degrees F. Roll out dough to about 1/8-inch thickness; cut into circles 1-3/4-inches in diameter. Place circles on an ungreased cookie sheet; sprinkle with powdered sugar. Bake for six to eight minutes or until edges are browned. Recipe makes about three dozen.
