Syrian squash patties
2 C butternut squash, baked & mashed
1 C bulgur wheat, soaked in water for 10 minutes
Salt to taste
1/2 tsp. black pepper
1/2 tsp. ground coriander
1/4 tsp. allspice
1/4 tsp. cumin
1 pinch cayenne pepper
1 medium onion, finely chopped
4 cloves garlic, finely chopped
1 C flour
1/2 C water
Vegetable oil (for frying)
Place all ingredients (except vegetable oil) in food processor; process mixture into a dough. Form dough into golf ball-sized balls. Flatten into patties, and then set aside. Heat vegetable oil in a large skillet; cook patties until they turn golden brown in color, flipping once to brown both sides. Drain patties on paper towels; serve.
